This salmon dish marinade is a regular in both my kitchens. At home and work as it has so many flavours. The sugar caramelises nicely and adds a touch of sweetness to take the heat out of the chilli sauce. The soy sauce adds salt and umami so it is a well rounded flavour for the oily omega 3 rich salmon.
