I recently made a gingerbread cake to pair up with a parsnip ice-cream and found it to be drier than I wanted so I’m swapping it out with my sticky toffee recipe and adding ginger to the mix. I’m also adding in figs for texture. Back when I had a restaurant I used to make a sticky toffee pudding with figs only, no dates. This gave a much lighter less sticky pudding. In future, I would reduce the dates to 100g and add 3 extra figs to this recipe so it’s a lighter way to finish a meal.
