Mee Goreng

If you are looking healthy quick to make dishes then Mee Goreng has got to head to the top of the ‘must make’ list.

 

A Malay dish that is layered with flavor. It has it all but I especially like to give it some extra sambal but for this recipe i’ll keep it toned down. But feel free to give it some extra kick!

What's in it!

2 tbsp oil of choice
½ onion, finely diced
220g firm tofu cut into cubes
100g french beans, trimmed and cut in half
100g pak choi chopped
300g cooked egg noodles
1½ tsp ground coriander
1 tsp ground cumin
2 tsp sambal olek
2 tsp thick soy sauce
2 tsp light soy sauce
50g bean sprouts
1 handful shredded iceberg lettuce
1 tbsp crispy fried shallots
Lemon wedges as a garnish

How to make Mee Goreng

Heat a large pan or wok. Once it is hot, add the oil, then add the onion and cook for a minute ot two to soften and take away the crunch . Add the tofu and cook to give it some even colour. Once the tofu has a nice colour add your beans. Continue cooking for two to three minutes stirring gently to avoid it to have to much colour, aka burning and making sure not to break the tofu into pieces.
Add the pak choi making sure the stem is half cooked before adding the noodles. Keep the noodles moving in a pan over a high heat so they are frying. Now add the dried spices, sambal, soy sauce and at the very end toss it your bean sprouts Cook for about a minute, or until the noodles are semi-soft.
Transfer the noodles into a large bowl and top with shredded lettuce and crispy shallots. Place the lemon wedges around the outside and serve.
